Lunch imagined and cooked hand in hand with Caro Diario for one of the episodes of Le Fooding Plans de Table held in L’Académie du Climat. 

The topic of the conversation was to develop a vision for tomorrow’s ways of eating. We invited the guests to come pick up their food on an inox tray, in a plantation like buffet, where all the food was arranged in different rows of earth tone preparations : stuffed cabbages, sponge bread, marinated eggs, confit shallots on chestnuts mush, matcha cubes, dark chocolate crumble mound, mushroom stock jellies.

We tried to infuse an idea of sobriety through limited quantities and a humble menu.
