I’ve always found birch tree forests back home extremely cinematic, the landscape that carries some sort of nostalgia, and birch tree juice was my childhood coconut water - full of nutrients from roots that take water and minerals from the soil pushing them into the trunk and moving upwards to the branches. I still remember the taste of this lightly sweet fresh water my grandparents would harvest in spring. Estonia is one of the northern and eastern European countries where the gathering and use of birch sap has remained an important activity until recently, due to the existence of large birch forests, low population density and the incorporation of sap into the former Soviet economic system.
